Monkey Bread

Pull-apart monkey bread goes wild with six delicious flavors (some sweet, some savory) that are more fun than a barrel of well, you know!
Have some fun making Cinnamon, Choco-Nutty Banana Chip, Zesty Orange and Cheddar-Bacon, Cheesy Garlic or Chorizo & Chimichurri monkey bread. Use your creative imagination and believe me you will enjoy the outcome!
Here is the Basic Monkey bread recipe.

BASIC MONKEY BREAD
Serves: 8 Prep:30 min
Bake: 35 min
1 envelope (1/4 oz.) active dry yeast
4 cups flour, plus more for kneading
2 Tbsp. sugar
1 tsp. salt
2 large eggs
1 stick butter, cut into 4 pieces, at room temperature, plus more for greasing pan
1. In a small bowl, mix 2/3 cup warm water and the yeast; let stand until dissolved, about 10 minutes.
2. Using a stand mixer with a dough hook; mix 4 cups flour, the sugar and salt at medium speed. Mix in the yeast mixture, eggs and butter pieces. Mix until smooth, adding more flour by the tablespoon if dough sticks to the sides of the bowl, 3 to 4 minutes.
3. Transfer the dough to a buttered bowl; turn to coat. cover; let rise in a warm, draft-free area until doubled in size, about 1 1/2 hours.
4. Preheat the oven to 360 degrees. Press down the dough. Pull off small pieces and roll into about 40 one inch balls. Generously butter a large Bundt pan.
5, Flavor the dough; pile the dough balls into the pan.
Bake until the bread is golden and cooked through, 35 to 40 minutes. Let cool 5 minutes. Invert onto a large plate. Let cool 30 minutes.
Make sure you try add topping to your Monkey Bread.

Cinnamon Bun Fun

Make the basic Monkey bread recipe.
For the caramel sauce, in a small bowl, microwave 1 stick butter on high until melted, 30 seconds. Then add 3/4 cup light brown sugar and whisk until smooth. In a small bowl whisk 3/4 cup sugar and tsp. ground cinnamon. In an bowl, microwave 4 tbsp., butter on high until melted. Roll the dough balls in the butter. Add cinnamon sugar; toss to coat. Pile into the buttered Bundt pan. Drizzle with the caramel sauce; bake as in step 5, 35 to 40 minutes. You can add 1/2 cup confectioners sugar and 1 tbsp., water until smooth. Drizzle over warm bread.

Make the Basic Monkey Bread. In a medium bowl, whisk 1 cup light brown sugar, 1/4 cup unsweetened cocoa powder and 1/2 tsp. ground allspice. In another bowl melt 4 Tbsp. butter. Roll dough balls in the butter. Add the brown sugar mixture, 1 cup mini chocolate chips, 3/4 cup chopped walnuts and 3/4 crushed banana chips; toss to coat. Pile into the buttered Bundt pan ; bake as directed. Drizzle the warm bread with 1/2 cup warm hot fudge sauce; sprinkle with 1/4 cup chopped walnuts and banana chips.

For the orange sauce, in a small bowl. microwave 1 stick butter sugar and 3 tbsp. orange juice, and whisk until smooth. In a medium bowl, microwave 4 tbsp. butter. In another bowl add 3/4 cup sugar, tbsp. orange zest. Melt 4 tbsp. butter. Roll the dough balls in the butter. Add the orange-zest sugar; toss to coat. Pile into the buttered Bundt pan. Drizzle with the orange sauce; bake as directed. Whisk 1/2 cup confectioners sugar, 1 tsp. orange zest and tbsp. juice until smooth. Drizzle over the warm bread; sprinkle with more zest.

Prep: 30 min + rising Bake: 40 min
Makes: 1 loaf of bread ( 16 Slices)

1/3 cup sugar
1 package (1/4 oz.) yeast (quick-rise)
1/3 tsp salt
3 to 3 1/2 cups flour
1/2 cup water
1/2 cup milk
1/3 cup butter, cubed
Filling
1 cup chopped fresh cranberries (or frozen)
1/4 cup packed brown sugar
1/4 cup water
1 Tbsp. butter
1 Tbsp. lemon juice
1/2 cup chopped walnuts
Toppings
2 Tbsp. flour
2 Tbsp. sugar
2 Tbsp. cold butter, divided
1. In a large bowl, mix the sugar, yeast, salt and 1 cup flour. In a small saucepan, heat water, milk and butter to 120 to 130 degrees. Add to dry ingredients; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough.
2, Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in warm place until doubled, about 1 hour.
3. Meanwhile, in a small saucepan, combine cranberries, brown sugar and water. Cook over medium heat until the cranberries are soft, about 15 minutes. Remove from heat; stir in butter, lemon juice and , if desired, walnuts. Cool.
4. Punch down dough. Turn onto a lightly floured surface; roll into a 20×10-in rectangle. Spread filling to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Transfer to a greased 9×5-inch loaf pan, arranging in a slight zigzag fashion to fit.
5. For the topping, in a small bowl, combine the flour and sugar; cut in 1` Tbsp. butter until crumbly. Melt remaining butter, brush over dough. Sprinkle with crumb mixture. Cover with a towel; let rise in a warm place until doubled, about 40 minutes. Preheat oven to 350 degrees.
6. Bake 40 -45 minutes or until golden brown. Carefully remove from pan to a wire rack to cool. ENJOY!!
TIP: Whenever you bake bread, use aluminum pans with a dull rather than a shiny or ark finishes. Glass baking dishes and dark finishes will produce darker crusts.

Apple, Cheese and Arugula Panini

This is what I call a BIG KIDS GRILLED CHEESE!

Serves: 4
You are going to need 8 slices of white sandwich bread.
2 tbsp. EVOO
1/2 lb. taleffio cheese, this cheese has a fruity tang or you can use Brie, Fontina or Bel Paese. They are all Italian cheeses. If you can’t find any of these remember to use a semisoft, flavored mild cheese.
1 cup baby arugula
salt and pepper
1. Heat griddle or large skillet over with EVOO. Place 4 bread slices oil side down on griddle and layer each with 2 cheese slices, 4 apple slices, 1/4 cup arugula and another cheese slice. Season with salt and pepper. Top with remaining bread slices oil side up.  Cook on both sides until golden and cheese is melted about 5 minutes. ENJOY!!

Prep:15 min.                                   Makes:  36 five inch straws

These are so much fun to make. You can easy make up any kind of Cheese Straw that you like. Here are a few I made up.

Here is what you will need to make your regular  Cheese Straws!
1 17 oz. package frozen puff pastry, thawed but still cold ( easier to handle)
flour, for dusting
1 large egg
1 cup shredded sharp cedar cheese
1/2 cup grated parmesan cheese
Kosher salt and ground pepper

1. Unfold the puff pastry sheets on a lightly floured surface. Beat the egg with 1 tsp. water; generously brush on the pastry sheets. ( Save some of the egg wash)
2. Combine the cheddar, parmesan, 1/2 tsp. salt and 1/2 tsp/ pepper in a medium bowl. Sprinkle the cheese mixture over 1 pasty sheet, then place the other pastry sheet on top, egg wash-side down, lining up the edges. Lightly dust the pastry with flour; firmly  press the top sheet down, then roll our the sandwiched pastry sheets into 10 by 12 inch rectangle.

3. Line 2 baking sheets with parchment paper. Cut the puff rectangle in half lengthwise. Cut each half crosswise into 18 strips. Twist each strip a few times and arrange 1/2 inch apart on the prepared baking sheets. Brush with reserved egg wash. Refrigerate at least 20 minutes or up to 1 day.
4. Position racks in the upper and lower thirds of the oven and preheat to 375*. Bake the cheese straws, switching and rotating the baking sheets halfway through, until puffed and golden brown, 30 to 35 minutes. Slider the straws onto a rack to cool or eat them hot like I do.

Think Beyond Basic Breads

Here are 9 different breads you can made for any occasion.
Basic Quick Vanilla Bread recipe.
Whisk 1 3/4 cups flour, 1 1/4 tsp. baking powder, 1/2 tsp. salt.
Beat 1 stick softened butter and 3/4 cup sugar with a mixer until fluffy; beat in to eggs and 1 1/2 tsp. vanilla, then 3/4 cup milk. Beat in the dry ingredients.
Add the batter and bake (see each one for baking times)- also you are going to add what is needed to make each different bread alone with this recipe, unless you see New Recipe, than follow that one.

Preheat oven to 350*, use a 9-by-5-inch loaf pan with parchment paper, leaving an overhang on two sides; coat well with cooking spray. Let all breads cool for 1 hour.

Tea Time anyone!
Please add zest of 1 lemon to the wet ingredients, Swirl 1/3 cup warmed raspberry jam into batter. Bake 55 to 65 minutes. Check with toothpick in the center.

New Recipe: For this bread : whisk 3/4 cup sour cream. 1/2  cup vegetable oil, 2 eggs. Separately, whisk 1 3/4 cups flour, 1/2 cup grated parmesan, 1 Tbsp. sugar, 2 tsp. each chopped rosemary and thyme, 1 1/2 tsp. baking powder, 1 tsp lemon zest, 1/2 tsp. each salt and pepper. Add 1 cup chopped oil= packed sun-dried tomatoes to the batter  and swirl in 1/3 cup pesto. Bake 40 to 50 minutes.

I love spreading peanut butter on this bread. It is great!

New Recipe: Combine 1 cup cinnamon graham cracker crumbs, 3/4 cups flour, 1 1/4 tsp baking powder and 1/2 tsp. salt. Beat 1 stick softened butter, 3/4 cup sugar with mixer until light and fluffy; beat in 2 eggs, 1 1/2 tsp vanilla, then 3/4 cup milk. Beat in the dry ingredients. Add 1 cup chopped dried figs to the batter.  For the topping on the bread, mix 1/3 cup cinnamon graham cracker crumbs, light brown sugar, 2 1/2 Tbsp. cold cubed butter, a pinch of salt; sprinkle over the loaf, bake 55 to 65 minutes.

New Recipe: Whisk 1 cup of pumpkin puree, 1/2 cup each vegetable oil, light brown sugar, 1/4 cup water, 2 eggs and 1 tsp. vanilla.  separately, whish 2 1/4 cups flour, 3/4 cup sugar, 2 tsp. baking power, 1 1/2 tsp pumpkin pie spice, and 1/2 tsp salt. Now make the chocolate bread- whisk 1 1/2 cups sour cream, 1/2 cup vegetable oil,  2 eggs, 1 tsp. vanilla. In another bowl, add 1 1/2 cup flour, 3/4 cup sugar, 1/4 cup unsweetened cocoa powder, 1/4 cup chocolate chips, 1 tsp. baking powder, 1/2 tsp salt, 1/4 tsp baking soda. Dividing batters between two pans; Bake 55 to 65 minutes.

Another one for a dinner party!

New Recipe: Make the Parmesan-Herb Bread, Whisk 3/4 cup sour cream, 1/2 cup vegetable oil, 2 eggs. Separately, whisk 1 3/4 cups flour, , 1 Tbsp. sugar, 2 tsp. chopped rosemary and thyme, 1 1/2 tsp. baking powder, 1 tsp. lemon zest. 1/2  tsp. each salt and pepper, 1/4 tsp. baking soda. Add sauté chopped spinach in olive oil and garlic. and 4 oz. crumbled goat cheese to batter. Bake 40 to 50 minutes.

Just because you can!

Just make the first recipe which is vanilla and then make the chocolate and swirl together  in two pans. Bake 55 to 65 minutes.

Oh and don’t forget Blueberry-Almond, Chocolate-Peanut Butter- and Cinnamon Roll. Remember add to the vanilla recipe what you like. Experimenting  is a lot of fun. Enjoy!!

When making this bread their are two kinds of bread you need to make. Vanilla and Chocolate bread. You will end up with 2 loafs of Black Forest Bread with Cherries, one to eat and one to freeze.

Preheat oven to 350* and line two 9 by 5 inch pans with parchment paper, leaving an overhang on two sides; coat and spray with cooking spray.

First make the Vanilla Bread.

1 3/4 cups flour
1 1/4 tsp. baking power
1/2 tsp. salt
1 stick softened butter
3/4 cup sugar
2 eggs
1 1/2 tsp. vanilla
1/4 cup milk ( Tip: If you only want to make Vanilla bread increase the milk to 3/4 of a cup)
1. Whisk the flour, baking powder, and salt. Beat the butter and sugar with a mixer until fluffy; beat in the eggs and vanilla, then the milk. Beat in the dry ingredients. Also mix into the batter 1 1/2 cups chopped pitted cherries.

2. Divide the batter between two pans.

Now make the Chocolate Bread

1 1/2 cups sour cream
1/2 cup vegetable oil
2 eggs
1 tsp. vanilla
1 1/2 cups flour
3/4 cups sugar ( I used 1/4 sugar)
1/4 cup unsweetened cocoa powder
1/4 cup semisweet chocolate chips
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1. Whisk sour cream, vegetable oil, eggs and 1 tsp. vanilla. In another bowl whisk flour, sugar, cocoa powder and chips, baking powder, salt and baking soda. Fold the wet ingredients into the dry ingredients.

Swirl in the chocolate batters.

Divide the batters between two pans; swirl the batter. Bake for 55 to 65 minutes.  Do the old toothpick check. Let cool 1 hour, then remove the loafs from the pan and transfer to a rack to cool completely. Remember one for you and one for the freezer!! Enjoy.

Great Bread to make and eat, also I gave some to my family for Christmas!

3/4 cup sugar
1/2 cup vegetable oil
1 egg
1 cup shredded peeled apples (1 large Apple)
1 1/2 cups flour
1/2 Tsp. baking soda
1/2 Tsp. baking powder
1/2 Tsp. salt
3/4 cup chopped walnuts
1/2 cup dried cranberries
1 Tbsp. sugar
1/2 Tsp. cinnamon

1. Heat oven to 350 degrees. Grease bottom only 8×4 or 9×5 inch loaf pan w/shortening.
2. In large bowl, mix 3/4 cup sugar, oil and egg. Sir in apple, flour, baking soda, baking powder and salt. Sir in walnuts and cranberries. Pour batter into pan. In small bowl, mix 1 Tbsp. sugar and cinnamon; sprinkle over batter.
3. Bake 45 to 55 minutes or insert a toothpick and hope it comes out clean. Cool 10 minutes. Loosen sides of the loaf from pan; remove from pan to wire rack. Cool completely, about 1 1/2 hours, before slicing!. I also put some in the freeze for use later. Freezes very good! Enjoy!!

Whisk 1 1/2 cups flour, 1 cup sugar and 1/2 tsp. each baking powder, baking soda and salt. Whisk 2 eggs, 1 1/2 cups grated zucchini, 1/2 cop chopped pecans, 1/2 cup vegetable oil and 1 tsp. vanilla. Sir the wet ingredients into the dry ingredients. Butter an 8 inch loaf pan. Pour in the batter; bake at 325 until a toothpick inserted into center comes out clean, 1 hour and 10 minutes. Let Cool! Enjoy!!

Salsa-Cheese Cornbread

Prep:10 min. Cook: 35 min.
Servings: 16

2 cups self-rising yellow cornmeal mix
1/4 cup vegetable oil ( can be any oil you like)
1 large egg, lightly beaten
1 cup sour cream
1/2 cup milk
1 can of whole-kernel corn, drained ( 8.5 Oz.)
1 cup salsa
1 cup shredded Cheddar cheese

1.Preheat oven to 400 degrees. You can use a cast-iron skillet or a 13x9x2 inches pan. Make sure you lightly grease the pans.
2. In a large bowl combine cornmeal mix,oil,egg,sour cream,and milk. Sir until ingredients are just blended. Add corn,salsa, and Cheddar cheese, stirring until blended. Spoon into a hot skillet or pour into the pan.
3. Bake until wedges are golden brown. 30 to 35 min. Enjoy!!

*Self-rising cornmeal mix is, 1 cup cornmeal, 2 Tsp. baking powder, 1/2 Tsp.salt, and in some cases flour.

The smell of warm bacon makes any morning bring folks to the breakfast table. These are easy to make and fun with the kids. This is the only time my husband will help in the kitchen is to make these delicious warm rolls. They disappear very fast in our house! Enjoy!!

Start to finish: 25 Min.
Makes: 8 Servings
1 tube (8oz.) refrigerated crescent rolls
6 bacon strips, cooked and crumbled
1 tsp. onion powder

1. Separate the crescent dough into eight triangles. Set aside 1 Tbsp. of bacon. Sprinkle onion powder and remaining bacon over the triangles; roll up and place point side down on an unreleased baking sheet. Sprinkle with reserved bacon.
2. Bake at 375 for 10 to 15 minutes or until golden brown. Serve warm.

FREEZE THEM- in a resealable plastic freezer bags.
