Tempura Onion Rings

Tempura Onion Rings

Prep: 20 minutes Cook: 30 minutes
Serves: 8
2 large onions, preferably vidalia, cut into 1/4 inch thick rings
Vegetable oil, for frying
1 1/4 cups flour
1/3 cup cornstarch
1 Tbsp. baking powder
1 tsp. salt
1 1/4 cups ice water
Ketchup or ranch dressing, for dipping

1.In a large bowl of cold water, soak the onions for 10 to 15 minutes. Drain on paper towels.
2.Meanwhile, in a large, deep pot or skillet, heat enough oil to reach a depth of 2 inches over medium-high heat until registers 360 degress on a deep-fry themometer. Fill a large bowl halfway with ice. In a medium bowl, whisk together the flour, cornstarch, baking powder and salt. Add the ice water and stir until a thin batter forms. Place the batter bowl inside the bowl of ice.
3.Using tongs, coat the onion rings with the batter, letting the excess drip pff. Working in batches, drop the rings into the oil and fry until light golden, 2 1/2 to 3 minutes. Using the tongs, tranfer the rings to paper towels to drain; return the oil to 360 between batches. Serve the onin rings with your choice of dripping sauce, ketchup or ranch dressing. ENJOY!!

Mediterranean Cauliflower Steaks

My mom would make us kids eat cauliflower aleast once a week. I remember my brothers turning up their noses, until Mom became very creative with recipes in her surprising ways. Now I enjoy this vegetable evertime I make it! As my brother Mike would say,”Try it, you’ll like it!”

2 heads cauliflower, trimmed

6 Tbsp.  Kraft olive Oil Vinaigrettes-Italian

1 1/2 cups Classico Spicy Red Pepper Pasta Sauce or any spicy sauce with peppers

1/2 cup crumbled Feta Cheese

1 Tbsp. chopped fresh parsley

1. Heat your outdoor grill or if you have an indoor Cuisinart Grill , use that. Heat grill to 350 degress.  Cut cauliflower lenghwise into 1 inch thick slices; brush with half the vinaigrette. Place, vinaigrette sides down, over lit side of grill.

2. Grill 2 min; turn. Brush with remaining vinaigrette; grill additional 2 minutes. Transfer cauliflower to unit side of grill; cook10 to 12 min. or until tender. A few minutes before cauliflower is done, cook pasta sauce in saucepan on medium-low heat until heated through, stirring frequently.

3. Cauliflower topped with pasta sauce, cheese and parsley. ENJOY!!

These mini meatballs are packed with lots of favor. It is just one way to make a meatball.
Mini-Bacon Meatballs
Makes: 28 meatballs
Total time: 30 minutes
2 strips bacon, diced
1/4 cup diced, minced
1/2 lb. ground sirlon or hambuger
1/4 cup dry bread crumbs
2 Tbsp. fresh parsley
1/2 tsp. paprika
1/2 tsp. kosher salt
1/2 tsp. balck pepper
1 egg beaten
1.Preheat oven to 400 degrees. Coat a cookies sheet with pan or use foil or parchment paper.
2.Cook bacon in a skillet over medium-high until crisp, about 4 minutes. Remove and place on a paper towel. Pour off all but 1 Tbsp. of oil.
2. Saute onion in same skillet in the the oil over medium heat until softened. Add garlic and cook 1 more minute.
3. Combine sirlon, cooked bacon, onion mixture, and all the other stuff in a large. Add in the beaten egg.
4. Form mixture into 1 inch meatballs and place on cookie sheet pan. Bake for 10 minutes.
These can be frozen for use later! ENJOY!!

The Best Green Bean Casserole

My father still loves Green Bean Casserole , so for Thanksgiving I made this special dish for him. It was very tasty to add cheese to  it and I got to say it was very good, I would make it again for sure!
2 (14.5) oz. cans French green beans, drained
1 (10.75) oz. can condensed cream of mushroom soup
1 (6 oz.) can French fried onions
1cup shredded Cheddar cheese
1. Preheat oven to 350 degrees.
2. Place green beans in a casserole dish. Mix the soup in a bowl with water or milk. Add it to the green beans, mixing it altogether.
3. Sprinkle with French fried onions on top with the cheddar cheese.
4. Bake in oven for about 15 minutes and make sure the cheese is all melted.

These cauliflower fritters are easy to make and a different way to have cauliflower. So delicious and tasty, I add some sharp chedder cheese on top for more favor.

Servings: 6
6 cups cauliflower florets
1/2 cup flour
3 extra large eggs
1 tsp. baking powder
1 (7oz.) package dry Italian-style salad dressing
1/2 cup oli olive for frying
1. Process cauliflower in a food processor finely minced, transfer to a large bowl.
2. Stir flour, eggs, baking powder, and Italian dressing mix into cauliflower.
3 Heat enough olive oil to cover the bottom of a frying pan over medium heat.

4. Drop heaping tablespoon of cauliflower mixture into the hot oil; fry until golden browm, about 3 minutes.

5. Place them on a baking sheet with cheddar cheese and bake for about 4 minutes or until cheese has melted.

Fried Green Tomatoes

Since I have a lot of tomatoes from my garden this year I decided to try my hand at frying up some green tomatoes. Those lightly battered plump tomatoes slices are gently fried before being baked to give them a crispy coating favor. I serve them with my homemade salsa.

1/2 cup all-purpose flour
1 tsp sugar
1 tsp salt
3/4 tsp cayenne pepper
1 egg
1 Tbsp. milk
1 cup bread crumbs ( or cornflake)
4 medium green tomatoes, cut into 1/2 inch slices
1/4 cup canola oil ( oil you like to use)
5 medium red tomatoes, chopped (seeded if you like)
1/2 cup minced fresh cilantro
1/4 cup chopped onion
2 jalapeno peppers, seeded and chopped
4 1/2 tsp. lime juice
2 tsp. sugar
1 garlic clove, minced
1/4 tsp. salt
1/4 tsp. pepper
1. In a shallow bowl, combine the flour, sugar, salt and cayenne. In another shallow bowl, beat egg and milk. Place bread crumbs in a third bowl or a large plastic bag. Pat green tomatoes sliced dry. Coat with flour mixture, dip in egg mixture, then coat in crumbs.
2. In a large skillet, heat 4 teaspoons of oil over medium heat. Fry tomatoes slices, four at a time, for 3-4 minutes on each side or until golden brown, adding more oil as needed. Drain on a paper towels.
3. Place fried tomatoes on an ungreased baking sheet. Bake at 375 degrees for about 4-5 minutes or until tender. In a large bowl, combine salsa ingredients and serve with the fried tomatoes. ENJOY!!

All you need is five simple things!
1 pound cherry tomatoes
2 shallot or onion, cut or chopped
12 oz. cheese ravioli
2 Tbsp. fresh chopped basil
Cooking spray
3 Tbsp. olive oil
2 Tbsp. balsamic vinegar for favor
1/4 tsp. salt and pepper

1. Preheat oven to 425 degrees.
2. Halve half of tomatoes. Arrange cut tomatoes, and shallot or onions on a jelly-roll pan coated with cooking spray. Drizzle with 1 Tbsp. oil; toss. Bake at 425 for 35 minutes.
3. Add 2 Tbsp. oil, vinegar, salt, and pepper to pan. Bake 10 minutes.
4 Cook ravioli according to package directions, omitting salt and fat. Drain ravioli, reserving 1/4 cup cooking liquid. Add ravioli to tomatoes; toss. Add cooking liquid, if needed. Garnish with chopped basil. ENJOY!!
TIP: I used Cheese Pierogies and it was wonderful!!

Apple, Cheese and Arugula Panini

Grilled Apple Cheese

This is what I call a BIG KIDS GRILLED CHEESE!

Serves: 4
You are going to need 8 slices of white sandwich bread.
2 tbsp. EVOO
1/2 lb. taleffio cheese, this cheese has a fruity tang or you can use Brie, Fontina or Bel Paese. They are all Italian cheeses. If you can’t find any of these remember to use a semisoft, flavored mild cheese.
1 cup baby arugula
salt and pepper
1. Heat griddle or large skillet over with EVOO. Place 4 bread slices oil side down on griddle and layer each with 2 cheese slices, 4 apple slices, 1/4 cup arugula and another cheese slice. Season with salt and pepper. Top with remaining bread slices oil side up.  Cook on both sides until golden and cheese is melted about 5 minutes. ENJOY!!

Since I had so many cucumber I decided to use some up. For those hot night!! Cold salad is the best!

Prep: 8 min Total: 3 hours
Serves: 4
1/2 cup rice vinegar
1 Tbsp. chopped fresh mint
1 1/2 Tbsp. sugar
1 1/2 tsp. Honey
1/4 tsp. salt
1/8 tsp. pepper
3 cups 1/4 -inch slices English cucumber
1 cup vertically sliced Vidalia sweet onion
1. Combine first 6 ingredients in a large bowl, stirring until sugar dissolves. Add sliced cucumber and onion, and toss well. Cover and refrigerate at least 3 hours, tossing occasionally. Here is a tip: if you don’t have rice vinegar, use a mild flavor such as apple cider vinegar.
Here is my thing I add some little fresh thyme and basil. Chopped up real fine. ENJOY!!

Herb Roasted Potatoes


Prep: 15 min. Total 1 hour
Serves: 12 to 18

I used red and white potatoes.

6 cloves garlic
2 sprigs rosemary
1/2 cup butter (1 stick)
1 lb. white potatoes (cut up into 1/4 inch slices)
1 lb. red potatoes (cut up into 1/4 inch slices)
( you can add purple potatoes too)
salt & pepper
2 Tbsp. minced fresh parsley

  1. Preheat the oven to 400 degree*. Mince the garlic really finely, then strip the leaves off the rosemary sprigs and mince them finely, too!
  2. Melt  the butter in a small skillet over medium heat, then throw in the rosemary  and garlic. Reduce the heat to low and simmer 10 minutes, or until the butter totally infused.
  3. Arrange all of the potatoes on the baking sheets and toss with the butter mixture. Roast 35 to 45 minutes, or until the potatoes are tender and nice and golden brown.  Arrange them on a large platter, add salt and pepper to taste and sprinkle the parsley over the top. ENJOY!!
